It's not a perfect solution, but trading one of your switch lites for a regular/oled switch would add more options. I primarily play my OG switch in handheld, and plopping it into the dock to play multiplayer games that have split screen is a nifty option. There are some games that take advantage of the handheld screen for 1-console multiplayer.

For record, I'm aware basically everything is possible on all models of the switch apart from a few exceptions. Mainly asking which multiplayer games where playing on a Lite won't hamper my experience much. It has to have decent camera angles, good graphics, and the characters must have an equal experience split. It is a must that it be a game we would both be able to play from beginning to end, so no games that Adventure Pals is a great choice. Not hard, it’s coop, and if one player is better than the other, that one gets dragged along. Plus it’s a very silly game. If you have a Wii, the ideal choice is Kirby’s Epic Yarn.
