It's not like Dark Souls 1 where Backstab was the whole back along with the right half or the left, it actually specifically means to stand directly in the middle of the back and then strike. Also, parrying in general is hard, but if you cannot parry during the first level you're doing something wrong.

The backstab is basically the same as in dks2. It has the same amount of startup frames. The only difference is the animation (a successful backstab was indicated when the fist connected at the end of the startup frames in dks2, in dks3, this is invisible), and the attack after it whiffs (no damage in dks2, r1 dmg and properties in dks3).
The other issue is, when you quit the game, you get sent back to the menu screen with the "press start" prompt. You press start and before you can even quit the game, it has to check to see if it can connect to the servers. Of course, I just force quit the game, but I don't want to do that, and of course shouldn't have to.

Rapier is still the best backstab damage weapons that DOESN'T require strength of 30plus. Some of the monster weapons can now do more damage with a backstab but you need HIGH SCALING STATS so you would need to be level 100plus. I actually managed to get my chaos rapier to do 2700 backstab damage consistently without the use of any stat scaling

If you’re standing behind a backstab-able boss and attack… well yeah, you’re going to backstab. And if they get out of the way in time, you’re going to be punished. That’s the balance for backstabs doing way more damage. If you don’t want backstabs, use a weapon less backstab-y or work on your positioning.

Because poise, the way it works in this game, it doesn't favor any weapon class, and by not favoring a weapon class, it inevitably in turn favors: weapons with the highest DPS, weapons with the highest poise DPS. And that's not big weapons. It's small weapons. And buffs, not working as they do in 2, also favor small weapons.
